Raised in the sun-drenched rolling vineyards of Bordeaux, Chef de Cuisine Antoine Dubois began his path in the culinary world standing alongside his grandmother. He learned to respect the soil, to listen to the seasons, and to let nature command the kitchen.

At Aurelia, Antoine and his team curate culinary journeys utilizing organic ingredients harvested from small-scale local micro-farms, wild ingredients responsibly foraged at sunrise, and deep-sea catches brought directly from generational fishing boats. Each recipe seamlessly blends classic French cooking techniques with modern molecular design.
